LAC-Caramel Popcorn

LAC was last night and it turned out to be really fun. There were only about six girls here. We chatted and watched Marie Antoinette. Ashlynn will have pictures posted. We munched on homemade caramel popcorn, and store bought white cheddar.
Here is the recipe for the popcorn:

  • 1 c. brown sugar
  • 1 c. butter
  • 1/4 c. karo syrup
  • 1/2 t. salt
  • 1/2 t. baking soda

In a microwave safe bowl combine sugar, butter, syrup, and salt.
Microwave and stir occationally until the mixture comes to a boil.
Microwave for another 2 minutes stirring after 1 minute.
Remove from the microwave and add baking soda. Stir.
Add to 4-5 qts. of popcorn. (the amount I had last night was a double recipe.)
Bake in the oven on a cookie sheet at 350 for 7-10 minutes for crispy caramel, or 5 minutes for chewy. Also, you can do this in the microwave if your microwave is big enough. Just add the caramel popcorn to a microwave safe bowl and cook for 90 seconds for crispy, or less for chewy. It just depends on how you like it. Last night I cooked the popcorn in the oven for about 8 minutes.

I am still enjoying the popcorn - it is my new favorite. Thanks Becca - I really enjoyed it.
